Yeah I'm no fun am I?
And I'm already using it to make my 4-bean chili (soy, pinto, kidney, black). Going to pick up some veggies (pasilla pepper, red onion, and tomato) to put into it tomorrow once the beans have softened and soaked up the spices (cumin, curry, chili powders, and garlic salt).
And I didn't mistake the cinnamon for cumin this time ^^.

The problem with HM/RF games for me, is the opposite of my issues in real life.
For New Years I'll probably try and make Hainanese Chicken rice and polenta using cottage cheese instead of gorgonzola.

EDIT: Actually, if I substitute a different meat for the pork will the recipe still work?
At least you don't have a milk, wheat or soy allgery. o.o
Chicken and pork substitute pretty easily because both have to be so thoroughly cooked. If you use beef, remember that fully cooked for chicken is practically incinerated for beef. With a crockpot though, just dump the meat in and make sure it cooks long enough.

I have at least 10 kids at my school with a dairy intolerance, what's the deal with all the food alleries anymore? Or maybe I never noticed it when I was a kid. o.o

I'm a geek so subective experience for me.
Keep stirring everything until the mixture is close to lumpy mashed potatoes. That's when you add the cheese is small clumps, don't add it as one big lump or it won't melt properly. For 1 cup polenta I used around 150g of aged gorgonzola. Keep mixing until it's like smooth mashed potatoes. Salt and pepper etc. then you can serve it.
Personally I'd use soft cheeses like gongonzola since they mix better with creamy dishes. Semi-softs like say mozzarela can probably work but it might make the polenta have a gummy consistency. If you want to use hard cheeses like Parmesiano-Reggiano you're gonna have to grate them into powder form before adding, and slightly less mass in grams than a soft cheese.
Also goes without saying that being an Italian dish, use an Italian cheese. I was never a fan of French cheeses anyway.
